Eggplant
Eggplant are typically available from early to mid July until late September. Featherstone grows a globe variety and an Asian variety, but both can be used for similar dishes in the kitchen. Eggplant tends to be a boom or bust crop: some years we have them up to our ears while other years they may only be available intermittently through the summer. Like other fruiting crops, eggplant are very sensitive to temperature and moisture. They grow quickly in the heat and slow down significantly when the weather cools. Because of this, you may receive varying sizes of eggplant throughout the season, though we try to keep them as consistent as possible.
Storage Tips
Your best bet for storing eggplant is in a semi-perforated or loosely covered container that won’t allow these fruits to dry out and wrinkle, but won’t trap moisture and cause mold or rot. Keep in a crisper drawer or the warmest part of your fridge, avoiding excess moisture. Wait until just before using to rinse.
