Potatoes

Featherstone grows three types of potatoes: red, yellow, and blue. We harvest our first early potatoes in July. These potatoes are tender and will often have thin, easy-to-peel skins. We’ll continue to harvest potatoes intermittently through the summer, up until our large storage potato harvest in late September. During October and throughout our Winter CSA program, you can expect potatoes to be available pretty much every week. These later season potatoes are fully cured for storage, with thicker skins and lower water content. As potatoes store, they become ever so softer. The potatoes you receive in November will be much crisper than the potatoes you might receive in January or February.

Storage Tips

Potatoes generally do best kept in the fridge, away from onions and bright light (two things that speed up the sprouting process!). We pack our potatoes into paper bags, which is a great place for them to stay as long as the bag doesn’t become too wet during storage. If you plan to eat your potatoes up quickly, they will do fine on your countertop or in a pantry for about a week before getting wrinkly.
