Carrots
At Featherstone, we’re kind of known for our carrots: you can find our crisp, sweet fall carrots at co-ops and grocery stores across Minnesota all winter long. We are able to do this with the help of a mechanical carrot harvester (check out a video here!) that pulls carrots from the ground and removes the leafy tops all in one go. Incredible! We start harvesting our main crop of carrots in late September, so you can expect this Featherstone staple in many of your late summer/early fall CSA boxes, with availability every week during our winter CSA program (unless we run out before February!). We also grow a small field of early carrots specifically for CSA members that we bunch with leafy tops attached and send out in early August boxes.
Storage Tips
If your carrots arrive in a bag, all you have to do is throw them in the fridge! They will last for months in there (if you can avoid eating them up for that long). If you receive a bunch of carrots with the tops attached, it is best to separate the tops from the roots (the tops are edible and are similar to parsley!). Store the roots in a bag or container in the fridge, and the tops similar to our other bunched herbs. Bunched carrots do not have the same storage virtues as our fall carrots, and should be eaten within a few weeks.
